Lemon Poke Cake Recipe

Creamy Lemon Poke Cake:
1 box Duncan Hines Perfectly Moist Lemon Supreme
1 cup water
3 large eggs
1/3 cup vegetable oil
1 3.4-oz box Instant Vanilla Pudding
2 cups milk
2 Tablespoon lemon zest, split
1 cup heavy whipping cream
3 Tablespoons powdered sugar
1 teaspoon vanilla extract

Directions:
1. Bake Lemon Cake according to box instructions using water, eggs and oil.
2. Remove from oven and allow to cool for 1 hour.
3. Use the handle of a wooden spoon to poke holes in the top of the cake.
4. Meanwhile whisk together vanilla pudding, milk and 1 Tablespoon lemon zest until semi set about 2 minutes.
5. Pour pudding over the cake and spread with a rubber spatula.
6. Cover with plastic wrap and chill overnight.
7. Whisk together heavy whipping cream, powdered sugar and vanilla extract until soft peaks form.
8. Spread whipped cream over the cake and garnish with the remaining 1 Tablespoon lemon zest.
9. Garnish with lemon slices & serve chilled
